Mother’s Day Treat ~ Mini Donut Cake Pops

 

While we love making things from scratch, sometimes you do not have the time and need an easy recipe hack!.. These adorable mini Donut Cake Pops are super easy to make with minimal ingredients and a few fun steps!..

 

INGREDIENTS

• 1/2 vanilla cake, cut in chunks

• 2-3 tbsp vanilla frosting
• 1/2 bag of light brown candy melts*
• 5-10 pieces of orange candy melts*
• 1 tbsp vegetable oil
• 12 Lollipop sticks or Icy pole/Popsicle sticks
• 1 cup powdered sugar/confectioners sugar
• 1 tsp milk
• Pink food gel
• Sprinkles, for decoration (Any colour)
• Desiccated Coconut, for decoration Thin ribbon, for decoration

 

*You can find Candy Melts at various baking supply stores, craft stores, some supermarkets or online. If you cannot find the colours you need, you can simply buy white candy melts and add a couple drops of food colouring and mix. Method

 

1. Place the cake in a food processor to get fine crumbs. Add 2-3 Tblsp of vanilla frosting and pulse until it resembles dough. If you don’t have a food processor that’s fine. Just use your hands to mix and squeeze the cake and frosting until it looks like the dough.

 

2. With a cookie scoop, scoop out cake dough and shape the cake into 12 balls. Flatten each ball into a donut disk shape.

 

3. Use the handle of a wooden spoon to carefully make a hole in the middle so that it looks like a donut. Repeat with remaining balls. Refrigerate for 5 minutes.

 

4.Place both colours of candy melts into a microwave safe bowl. Add oil. Microwave for 60 seconds. The candy will not look melted, but it is. If you keep microwaving it, it will burn. Stir candy with a spoon until it’s smooth.

 

5.Take a lollipop/Icy pole stick, dip it into the candy, then insert it in the bottom of the donut. Place in a cake pop holder, a piece of styrofoam or a glass of rice to let it dry. Repeat with remaining cake pops.

 

6. Take each cake pop and dip them fully into the candy. Tap the stick on the side of the bowl to remove excess chocolate. Then put each back into the holder. Let them fully dry. It can take 10-15 minutes.

 

7. In the meantime, mix powdered sugar with milk. Add a few drops of pink food gel.

 

8. Take each donut cake pop and with a spoon, drizzle icing on top. Add some with sprinkles and some with desiccated coconut. Let them dry.

 

9. Cut a small piece of the ribbon and tie on the donut cake pop stick to decorate. Happy Mother’s Day!
