INGREDIENTS
• 500g beef mince
• 1 onion, chopped
• 2 garlic cloves, chopped
• 4 mushrooms, chopped
• 2 carrots, grated
• 1/2 cup red wine
• 1/2 tsp smoked paprika
• 1/2 tsp nutmeg
• 2 tbsp instant gravy + 1 cup boiling water
• 1/4 cup beef stock
• 2 tbsp tomato paste
• 2 sheets each puff & shortcrust pastry, thawed
• 2 tbsp olive oil
• 1 egg, beaten
1. Preheat oven to 180?C / 360?F.
2. Sauté onion, garlic and beef in oil until browned. Add wine, spices, mushrooms and carrots, cooking until liquid evaporates.
3. Stir in tomato paste, stock and gravy. Remove from heat.
4. Cut pastry: 12 cm for bases, 8 cm for tops. Line muffin tin with shortcrust, fill and top with puff pastry.
5. Seal, egg wash and pierce tops with a fork. Bake for 25 minutes or until golden.
6. Serve hot with tomato sauce, of course!
*Freezing instructions: After baking the pies, cool and cover with 2 layers of plastic wrap and 1 of foil. Label, date and freeze for up to three months. Thaw overnight in the refrigerator. Discard plastic wrap and foil. Reheat as in step 9, until filling is hot. If pastry is browning too much, cover pies loosely with foil.
