Combination Teriyaki Fried Rice

Embark on a flavour journey with our Combination Teriyaki Fried Rice! This savoury stir-fry blends Japanese and Western tastes in a harmonious dish. Fragrant jasmine rice, succulent meats and colourful veggies unite in a tantalising homemade teriyaki sauce, creating a perfect meal for any occasion!

INGREDIENTS

• 2 cups cooked jasmine rice (preferably cold)

• 150g boneless chicken breast, diced

• 150g shrimp, peeled and deveined (optional)

• 100g beef steak, thinly sliced

• 1 small onion, finely chopped

• 1 red bell pepper, diced

• 1 cup broccoli florets, chopped into pieces

• 1 cup frozen peas and carrots, thawed

• 2 tbsp vegetable oil

• 2 cloves garlic, minced

• 1 tsp fresh ginger, minced

• 3 Tbsp soy sauce

• 2 Tbsp mirin (available in supermarkets)

• 2 Tbsp sake (or dry white wine)

• 2 Tbsp brown sugar

• 1 Tbsp oyster sauce

• 2 eggs, beaten

• 1 cup baby spinach

• 2 green onions, finely sliced

• 1 tbsp sesame seeds, toasted

• Salt and pepper to taste

 

Method

1. Prepare Sauce: Mix soy sauce, mirin, sake, brown sugar and oyster sauce. Set aside.

 

2. Brown chicken, (shrimp, if using) and beef in vegetable oil. Set aside.

 

3. Sauté onion, bell pepper, broccoli, garlic and ginger.

 

4. Scramble eggs; set aside.

 

5. Add rice, proteins, veggies and sauce to pan. Stir-fry everything together for about 5-7 minutes on medium-high heat until the rice is heated through and the proteins are cooked. You’ll know it’s ready when the rice is hot and separate, and the proteins are cooked through.

 

6. Toss in spinach until wilted.

 

7. Season with salt and pepper. Garnish with green onions and sesame seeds. Enjoy!

 

Tips:

• Use day-old rice for best results

• Customise with your favourite meat and veggies

• Adjust sauce sweetness to taste
