Euro Beef Roulade

• 1-1.5 kg (2-3 lbs) thinly sliced Round Roast (ask your butcher)
• 8-12 slices of bacon (optional)
• 1 onion, very thinly sliced
• 2 carrots, very thinly sliced into julienne strips
• 2 whole dill pickles, thinly sliced
• 120 ml (1/2 cup) German yellow mustard or Dijon mustard
• Salt and pepper
• Toothpicks
• 30 g (2 tablespoons) butter or oil, or a combination of both
• 240 ml (1 cup) water or beef broth
Method
1. Lay out the thinly sliced round roast on a flat surface. Spread mustard evenly over each slice of meat.
2. Place a slice of bacon (if using), some onion, carrot, and pickle on each slice of meat. Sprinkle salt and pepper over the fillings.
3. Roll up each slice tightly and secure with toothpicks. Heat butter or oil in a large skillet over medium-high heat. Brown the roulade on all sides in the skillet.
4. Once browned, pour in water or beef broth. Cover the skillet and simmer for about 1.5 to 2 hours, or until the meat is tender. Serve hot with the sizzling pan juices poured over the top!
