Fresh Avocado and Halloumi Salad
Combining creamy avocado, golden halloumi and crisp veggies, this salad is light yet irresistibly satisfying!
• 200g halloumi cheese, sliced
• 2 ripe avocados, sliced
• 1 cup mixed salad greens (such as spinach, rocket, lettuce)
• 1 cucumber, sliced
• 1/2 red onion, thinly sliced
• Cherry tomatoes, halved
• 1/4 cup roasted pine nuts (optional)
• Fresh lemon juice
• Olive oil
• Salt and pepper to taste
Method
1. Heat a little olive oil in a non-stick pan over medium heat. Grill the halloumi slices for 2-3 minutes on each side, until golden and crispy.
2. In a large bowl, combine mixed greens, cucumber, red onion and tomatoes.
3. Gently fold in the sliced avocado.
4. Top with the grilled halloumi and roasted pine nuts (if using)
5. Drizzle with olive oil and lemon juice, then season with salt and pepper.
