Fresh Key Lime Pie
Treat your family to a refreshing key lime pie! With a buttery biscuit crust and a smooth, creamy lime filling, it’s a delightful dessert that’s sure to impress!
• 200g Arnott’s Marie biscuits (or any plain digestive biscuits)
• 1/3 cup granulated sugar
• 125g unsalted butter, melted
• 3 egg yolks
• 1 can (395g) sweetened condensed milk
• 1/2 cup fresh lime juice (about 4-5 limes, or bottled lime juice)
• Whipped cream (optional, for topping)
Method
1. Preheat the oven to 175°C (350°F)
2. Crush the Marie biscuits in a food processor or zip-lock bag until finely ground. Mix with sugar and melted butter, then press firmly into the bottom and sides of a 9-inch pie tin to form the crust.
3. Bake for 10 minutes and let cool slightly.
4. In a mixing bowl, beat the egg yolks until smooth, then add sweetened condensed milk and lime juice, mixing until well combined.
5. Pour the filling into the crust and bake for 15 minutes, or until set with a slight jiggle in the centre.
6. Allow the pie to cool to room temperature, then refrigerate for at least 2 hours.
Serve topped with whipped cream and a garnish of fresh thinly sliced lime!
