INGREDIENTS

• 2 tablespoons unsalted butter

• 1 small brown onion, finely chopped

• 2 tablespoons plain flour

• 3/4 cup milk

• 1 cup English spinach/ silver beet, chopped, stems removed

• 100g Ham, chopped (or deli meat of your choice)

• 3/4 cup grated cheese – Tasty, Cheddar or Mozzarella (or all 3 combined!)

• 2 sheets puff pastry, thawed, each cut into 4 squares

• 1/4 cup (extra) grated cheese*

• Egg wash (1 egg whisked with 1 tablespoon water)

• 2 teaspoons Poppy seeds

Method

1. Preheat oven 200°C and line a large baking tray with baking paper

2. Heat butter in a medium saucepan over medium heat and add onion and cook for 1-3 minutes

3. Add the flour and stir to combine for about a minute, then pour in the milk in two batches, stirring well between each addition. Continue to stir until there are no lumps, about 5 minutes

4. Take off the heat and stir in the spinach then the ham. Add cheese and seasoning (if desired) and combine into the mix

5. Spoon 1 heaped tablespoon of the mixture into the centre of each square of prepared puff pastry. Sprinkle with extra cheese then fold each of the corners of the pastry toward the centre of the square without touching the middle

6. Brush the pastry with egg wash, sprinkle with poppy seeds and bake for 20 minutes or until golden

7. Enjoy warm or tastes just as great when they are cold!
