Hearty Italian Chicken Cacciatore

Succulent chicken simmered in a savoury tomato and wine sauce with sweet capsicum, earthy mushrooms and fragrant herbs, resulting in a delightful dish that embodies the essence of Italian comfort food!

INGREDIENTS

• 1 whole chicken (skin-on), cut into pieces

• Salt and pepper

• 1 tbsp olive oil

• 1 onion, chopped

• 1 capsicum, sliced

• 1 cup mushrooms, sliced

• 3 garlic cloves, minced

• 1/2 cup red or white wine

• 1 can (400 g) crushed tomatoes

• 1/2 cup chicken stock

• 1 tsp dried Italian herbs

• Fresh parsley or basil, for garnish

 

Method

1. Season chicken with salt and pepper. Sear in olive oil over medium heat until golden, set aside.

 

2. In the same pan, sauté onion, capsicum, mushrooms, and garlic until softened.

 

3. Add wine, simmering until reduced by half. Stir in tomatoes, stock, and herbs.

 

4. Return chicken to the pan, cover and simmer for 35–40 minutes until tender.

 

5. Garnish with fresh parsley or basil and serve. Buon Appetito!
