Mamma’s Minestrone

A soul-warming minestrone filled with fresh vegetables, wholesome flavours and an inviting aroma that fills the home with comfort!

INGREDIENTS

• 4 tbsp olive oil

• 1 onion, chopped

• 2 garlic cloves, minced

• 1 celery stalk, diced

• 1 carrot, diced

• 1 zucchini, diced

• 1 potato, diced

• 1 cup green beans, cut

• 1 cup cabbage, shredded

• 1 cup spinach or Swiss chard, chopped

• 1/2 cup diced tomatoes

• 1/2 cup cannellini beans (soaked overnight or 1 can, drained)

• 6 cups broth (vegetable or chicken)

• Salt & pepper

• Fresh basil & parsley, chopped

• Optional: 1/2 cup short pasta (e.g. small shells, elbow macaroni, or orecchiette)

• Grated Pecorino Romano or Parmigiano Reggiano cheese

 

Method

1. Heat olive oil in a pot and sauté onion and garlic until softened.

2. Add the vegetables and tomatoes, cooking for 5 minutes.

3. Add beans and broth and simmer for 30-40 minutes until tender.

4. Optional: Add pasta in the last 10 minutes and let it cook directly in the soup for a more flavourful result.

5. Season with salt, pepper and garnish with fresh herbs and cheese

 

Serve drizzled with olive oil and crusty bread—a meal perfect for gathering the family together!
