Vibrant Thai Green Chicken Curry
Looking for a quick, delicious dinner idea? This Thai chicken curry is fresh, tender and full of flavour! Simple to make, it’ll be ready in just 30 minutes! Serve it over rice with a squeeze of lime and you’ve got a perfect meal!
• 1 Tablespoon vegetable oil
• 2 tablespoons green curry paste (adjust to taste)
• 1 can (400 ml) coconut milk
• 400g chicken breast, cut into small pieces
• 1 cup mixed vegetables (eg. peas, mushrooms, bell peppers)
• 1 tablespoon soy sauce or fish sauce
• 1 teaspoon sugar (optional)
• Fresh basil or cilantro for garnish
• Lime for garnish
• Cooked rice, for serving
• Fresh chilli (optional)
Method
1. In a large skillet or wok heat the vegetable oil over medium heat.
2. Add the curry paste and cook for 1-2 minutes until fragrant.
3. Stir in the chicken pieces and cook for about 5 minutes, or until the chicken is no longer pink.
4. Pour in the coconut milk, mixing well with the curry paste. Bring to a simmer.
5. Add the mixed vegetables and cook for another 5-7 minutes until the chicken is cooked through and the vegetables are heated.
6. Stir in the soy sauce, sugar and chilli (if using)
7. Garnish with fresh basil or cilantro, serve with cooked rice and a squeeze of fresh lime!
