Winter White Bean Soup

This bean soup is easy to make and budget-friendly. It tastes and smells amazing and it’s ready in just 20 minutes!

 

INGREDIENTS

• 2 cans (28oz – 800 grams)cannellini beans or white beans, drained

• 1 medium-size onion, diced
• 1 celery stalk, diced
• 1 large carrot, diced
• 1-2 garlic cloves, diced or pressed
• 1 cup (7 oz – 200 grams), frozen spinach * (optional)
• 2 medium-size potatoes, peeled and cut into chunks
• 1 Tbsp olive oil, plus more for serving
• 1 Tbsp tomato paste
• 1/3 cup (80 ml) white wine
• 1 sprig Rosemary
• 2 cups (500 ml) vegetable broth or hot water
• 1/2 tsp paprika (optional)
• 1/2 tsp fine salt, plus more to taste
• 1/8 tsp black pepper, plus more to taste

Baked Meatballs

A sure crowd pleaser, these simple-to-make meatballs are tender and full of flavour!

 

INGREDIENTS

• 1 500 gr lean ground beef

• 1/2 cup onion finely chopped
• 1/4 cup dried bread crumbs
• 2 garlic cloves minced
• 1 egg
• 1/4 cup parmesan cheese finely grated
• 3 Tbsp. ketchup
• 1 tsp. salt
• 1/4 tsp. pepper
• 1 Tbsp. parsley minced (or about 1/2 Tbsp. dried)

Antipasto Platter

This antipasto platter is a combination of Italian meats, cheeses, vegetables and breads, all arranged to create a fabulous appetiser display. The perfect showpiece for any gathering, or lunch and it takes just minutes to put together!

 

INGREDIENTS

• 800 grams assorted cured meats such as salami, prosciutto & pepperoni

• 500 grams cheese sliced or cubed, such as provolone or asiago
• 1 cup small mozzarella balls, boconcini, plain or marinated in olive oil and herbs
• 1 cup olives
• 2 cups grilled and/or pickled vegetables such as pepperoncini, roasted red peppers, marinated artichokes, marinated beans
• 1 tablespoon chopped peanuts
• 1 cup raw vegetables cherry tomatoes, baby carrots, cucumber
• 2-3 cups assorted breads focaccia, breadsticks, crostini
• fresh herbs for garnish
• sauces such as bruschetta or olive tapenade optional

INGREDIENTS

• 1 medium banana, peeled and split lengthwise

• 1 scoop each vanilla, chocolate and strawberry ice cream
• 2 tablespoons sliced fresh strawberries or 1 tablespoon strawberry ice cream topping
• 2 tablespoons pineapple chunks or 1 tablespoon pineapple ice cream topping
• 2 tablespoons whipped cream
• 1 tablespoon chopped peanuts
• 1 tablespoon chocolate syrup
• 2 maraschino cherries with stems

INGREDIENTS

• 2 cup self-raising flour

• 1 1/2 cup milk

Fried Potatoes with Bacon ~ Crispy on the outside, fluffy on the inside…so satisfying!

(Serves 4)

INGREDIENTS

• 1 cup bacon(225 g), diced
• ½ cup yellow onion(75 g), diced
• ½ cup vegetable oil(120 mL)
• 3 potatoes (such as Bintje) boiled whole until just tender and cut into quaters
• 1 teaspoon salt
• ½ teaspoon pepper
• 2 tablespoons fresh parsley, chopped

Spinach & Ricotta Cannelloni

INGREDIENTS

 

SAUCE:

• 1 tbsp olive oil

• 1 garlic clove , finely chopped
• 1 small onion , finely chopped
• 800 g / 28 oz crushed tomato
• 1 cup water (swirl in tomato can to clean out)
• Handful fresh basil leaves , torn

FILLING:

• 250 g / 8 oz frozen chopped spinach

• 500 g / 1 lb ricotta
• 1/3 cup grated parmesan
• 1 cup shredded Mozzarella cheese
• 1 egg
• 3/4 tsp salt + pepper to taste
• 1 large garlic clove , minced
• 1/8 tsp nutmeg powder (optional)
• 1/2 tsp salt and pepper , each

CANNELLONI

• 18 – 22 dried cannelloni tubes, or fresh lasagna sheets (rolled into tubes)

• 1 – 1 1/2 cups shredded Mozzarella
• More basil , for garnish

Mother’s Day Treat ~ Mini Donut Cake Pops

INGREDIENTS

• 1/2 vanilla cake, cut in chunks

• 2-3 tbsp vanilla frosting
• 1/2 bag of light brown candy melts*
• 5-10 pieces of orange candy melts*
• 1 tbsp vegetable oil
• 12 Lollipop sticks or Icy pole/Popsicle sticks
• 1 cup powdered sugar/confectioners sugar
• 1 tsp milk
• Pink food gel
• Sprinkles, for decoration (Any colour)
• Desiccated Coconut, for decoration Thin ribbon, for decoration
* (Candy melts can be found in most baking aisles at the supermarket and cake stores)

Baked Pears with Honey, Cranberries & Walnuts

(Serves 4-8)

INGREDIENTS

• 4 pears, such as, Bartlett or Anjou
• 24 fresh cranberries
• 4 tbps chopped walnuts
• 1/4 tsp ground cinnamon, plus more, if needed
• 1/4 tsp ground nutmeg, plus more, if needed.

• 4 tsp raw honey

Hearty Chicken & Vegetable Casserole

INGREDIENTS

• 1 tbsp. olive oil

• 1 kg chicken thighs
• 1 brown onion chopped
• 3 garlic cloves finely chopped
• 2 carrots half lengthways and cut into discs
• 2 potatoes peeled and diced
• 1 cup frozen peas
• 2 Roma tomatoes diced
• 2 tablespoons spelt flour
• 400 ml 2 cups boiling chicken stock
